I can’t recommend The Illustrated Cook’s Book of Ingredients enough. It has pictures of all of the 2500 different edible things on the earth and how to choose the best ones and cook with them. It’s pretty amazing that there are so many things that are eaten all over the world, but in most all grocery stores in America, we can only get a tiny, tiny fraction of what we could have. Some of this is due to local climate/farming, but most likely it’s due to the economics of growing, shipping, and profiting from the old standby’s.
